Chocolate Lava Cake

    Prepare the Chocolate Mixture

    Preheat your oven to 200°C (390°F). In a double boiler, melt the dark chocolate and unsalted butter together until smooth. Stir occasionally to prevent burning.

    Combine Ingredients

    In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until light and fluffy. Gradually fold in the melted chocolate mixture, then add the vanilla extract and flour. Mix until just combined.

    Prepare Baking Dishes

    Grease four ramekins with butter and dust with flour or cocoa powder to prevent sticking. Pour the batter into the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking tray and bake for 12-14 minutes, or until the edges are set but the center is still soft.

    Let the cakes cool for 1 minute, then invert onto plates. Dust with powdered sugar and serve immediately.

    Make the Tart Shell

    In a bowl, combine the all-purpose flour, unsalted butter, and granulated sugar. Mix until crumbly. Add the egg yolk and knead until a dough forms. Wrap in plastic wrap and chill for 30 minutes.

    Bake the Tart Shell

    Preheat your oven to 180°C (350°F). Roll out the dough and press it into a tart pan. Prick the bottom with a fork and bake for 20 minutes or until golden. Let it cool.

    Prepare the Filling

    In a saucepan, heat the heavy cream and vanilla extract until just simmering. In a small bowl, dissolve the gelatin powder in water. Once the cream is hot, remove from heat and whisk in the gelatin until dissolved.

    Pour the cream mixture into the cooled tart shell. Arrange the mixed berries on top. Refrigerate for at least 2 hours to set.
