Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter. Dust them with cocoa powder to ensure the cakes can be easily removed.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, melt the unsalted butter and semi-sweet chocolate together. Stir continuously until smooth and fully combined. Remove from heat and let cool slightly.

Mixing

  1. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and salt until well combined.

  2. 4

    Mix Wet Ingredients

Once the chocolate and butter mixture has cooled slightly, whisk in the large eggs one at a time, followed by the vanilla extract. Make sure each egg is fully incorporated before adding the next.

  3. 5

    Combine Mixtures

Gradually fold the dry ingredients into the wet ingredients using a spatula until just combined. Be careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  2. 7

    Bake Cakes

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are set but the center is still soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute. Carefully run a knife around the edges to loosen the cakes.

Serving

  1. 9

    Invert and Serve

Invert each ramekin onto a plate and gently lift the ramekin off. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream on the side.
