    Preheat Oven and Prepare Pans

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    Mix Wet Ingredients

    In a separate bowl, mix the almond milk, vegetable oil, vanilla extract, and apple cider vinegar.

    Combine Wet and Dry Ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

    Divide Batter

    Divide the batter evenly between the prepared cake pans.

    Bake the Cake

    Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

    Cool Cakes

    Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Vegan Buttercream

    Cream Vegan Butter

    In a mixing bowl, beat the vegan butter until smooth and creamy.

    Add Powdered Sugar

    Gradually add the powdered sugar, mixing on low speed until combined, then increase to medium speed until fluffy.

    Add Flavor and Adjust Consistency

    Stir in the vanilla extract and almond milk until the buttercream reaches your desired consistency.

Mixed Berry Coulis

    Combine Ingredients

    In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

    Cook Coulis

    Cook over medium heat, stirring occasionally, until the berries break down and the mixture becomes syrupy (about 10 minutes).

    Blend and Strain (if needed)

    Remove from heat and let cool slightly before blending until smooth. Strain if desired to remove seeds.

Assembly

    Layer One

    Once the cakes are completely cool, place one layer on a serving plate and spread a layer of vegan buttercream on top.

    Layer Two

    Place the second cake layer on top and frost the top and sides of the cake with the remaining buttercream.

    Drizzle the mixed berry coulis over the top of the frosted cake before serving.
