Preparation

Prepare the 1000 Island Dressing

1. Mix the Dressing

In a bowl, combine the mayonnaise, ketchup, sweet pickle relish, apple cider vinegar, onion powder, garlic powder, paprika, salt, and black pepper. Whisk together until well blended. Set aside in the fridge to chill while preparing the sandwich.

Cook the Chicken and Bacon

2. Cook the Chicken

Season the chicken breasts with salt and pepper. Heat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest before slicing.

3. Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 4-5 minutes. Remove from the skillet and place on paper towels to drain excess fat.

Assemble the Sandwich

4. Prepare the Bread

Butter one side of each slice of sourdough bread with Asiago butter. This will be the outer side of the sandwich.

5. Layer the Ingredients

On the unbuttered side of two slices of bread, layer the sliced grilled chicken, crispy bacon, provolone cheese, and sliced Roma tomatoes. Spread a generous amount of the 1000 Island dressing on top.

6. Close and Grill

Top with the remaining slices of bread, buttered side out. Heat a pan or griddle over medium heat and grill the sandwiches for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Serve the Sandwich

Remove the sandwiches from the pan, cut in half if desired, and serve with a side of ketchup for dipping. Enjoy your delicious sandwich!
