Corned Beef Preparation

Prepare the Corned Beef
In a large pot, combine the corned beef brisket, water, and pickling spices. Bring to a boil over medium-high heat.

Cook the Corned Beef
Reduce the heat to low, cover, and simmer for 2.5 to 3 hours until tender. Remove from heat and let cool.

Slice the Corned Beef
Once cooled, slice the corned beef thinly against the grain.

Prepare the Onions
Slice the yellow onions into thin rings.

Spicy Red Cabbage & Dill Slaw Preparation

Make the Slaw
Shred the red cabbage and carrots. In a large bowl, combine them with mayonnaise, dill pickles, apple cider vinegar, hot sauce, salt, and black pepper.

Refrigerate the Slaw
Mix well until all ingredients are incorporated, then let sit in the refrigerator for at least 30 minutes to allow flavors to meld.

Prepare the Dressing
In a small bowl, whisk together mayonnaise, ketchup, sweet pickle relish, apple cider vinegar, salt, and black pepper until smooth.
Assembling the Reuben

Grill the Sandwich
Top with the other half of the roll and grill in a skillet or panini press over medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Serve warm with the house-made 1000 island dressing on the side.
