    Prepare the Potatoes

    Wash and peel the Kennebec and sweet potatoes. Cut them into even-sized strips, about 1/4 to 1/2 inch thick for uniform cooking. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature.

    Dry the Fries

    Once the fries have soaked, drain and pat them dry with a clean kitchen towel to remove excess moisture.

    Fry the Fries

    Carefully add a handful of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    While the fries are still hot, sprinkle with salt and black pepper to taste.
