Cooking Pasta
1. Boil Water
Fill a large pot with water and bring it to a boil over high heat.
2. Cook Pasta
Once the water is boiling, add the elbow macaroni. Cook according to the package instructions until al dente, usually about 8-10 minutes.
3. Drain Pasta
Once the pasta is cooked, drain it in a colander and set aside.
Making Cheese Sauce
5. Create Roux
Add the all-purpose flour to the melted butter, stirring constantly for about 1-2 minutes until it forms a smooth paste.
6. Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Continue to stir until the mixture thickens, about 3-5 minutes.
7. Add Cheese
Reduce heat to low and add esquelito cheese and cheddar cheese to the milk mixture. Stir until the cheeses are fully melted and the sauce is creamy.
8. Season the Sauce
Stir in salt, black pepper, garlic powder, and onion powder into the cheese sauce.
Combining and Serving
9. Combine Pasta and Sauce
Add the drained elbow macaroni to the cheese sauce. Stir until the pasta is well coated with the sauce.
10. Prepare Toppings (optional)
If using, mix breadcrumbs with parmesan cheese in a small bowl.
11. Serve
Serve the creamy mac and cheese hot, with optional breadcrumb topping if desired.
