1. Caramelize the Onions

In a medium skillet, heat a teaspoon of oil over medium heat. Add the sliced red onion and a pinch of salt. Cook, stirring frequently, for about 10-15 minutes until they are softened and caramelized. Set aside.

2. Prepare Goat Mousse

In a small bowl, mix the softened goat cheese with a pinch of salt and pepper until creamy. Set aside.

3. Prepare the Butter Mixture

In a small bowl, combine softened butter, grated Asiago cheese, and chopped fresh rosemary. Mix until well combined and set aside.

Assembly and Cooking

4. Assemble the Sandwich

Take two slices of sourdough bread. Spread the goat mousse on one slice, then layer with provolone cheese, cheddar cheese, sliced tomato, and caramelized onions. Top with another slice of sourdough bread.

5. Butter the Bread

Spread the Asiago cheese butter mixture generously on the outer sides of the assembled sandwich.

6. Grill the Sandwich

Preheat a skillet over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

7. Serve

Once grilled to perfection, remove the sandwich from the skillet, slice in half, and serve immediately.
