Prepare the Burger Patty

    Cook Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Mash Black Beans

    In a large bowl, add 1 cup of canned black beans that have been drained and rinsed. Use a fork or potato masher to mash the beans until mostly smooth, leaving a few chunks for texture.

    Combine Ingredients

    To the mashed black beans, add cooked quinoa, grated carrot, chopped onion, minced garlic, cumin, chili powder, salt, black pepper, and breadcrumbs. Mix until well combined.

    Form Patties

    Divide the mixture into 4 equal portions and shape them into burger patties. If the mixture is too wet, add more breadcrumbs until it holds together.

    Cook Patties

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the patties and cook for about 4-5 minutes on each side, or until golden brown and heated through.

Assemble the Burger

    Prepare Buns

    Lightly toast the burger buns on a skillet or in a toaster until golden brown.

    Add Toppings

    On the bottom half of each bun, place a lettuce leaf, add a veggie patty, then top with slices of tomato and red onion.

    Complete the Burger

    Cover with the top half of the bun and serve immediately.
