Method

For the Beef Ravioli

  1. 1

    Make the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center, add the eggs and olive oil. Mix until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

  3. 3

    Prepare the Filling

In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then mix in ricotta cheese, Parmesan cheese, black pepper, and Italian seasoning. Allow to cool.

  4. 4

    Roll Out the Dough

After resting, roll out the dough into thin sheets using a pasta machine or a rolling pin.

  5. 5

    Fill the Ravioli

Place small spoonfuls of filling on one sheet of dough, leaving space between each. Wet the edges of the dough with water, then fold over and seal the edges. Cut into individual ravioli.

For Toasting

  1. 6

    Toast the Ravioli

In a large skillet, heat the butter and olive oil over medium heat. Add the ravioli in batches, to avoid overcrowding, and toast for about 3-4 minutes on each side until golden brown.

For Marinara Sauce

  1. 7

    Cook the Sauce

In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Stir in canned crushed tomatoes, basil, oregano, salt, black pepper, and sugar. Simmer for 20-25 minutes.
