Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Potatoes

    Wash the Russet potatoes thoroughly and dry them with a towel. Prick each potato several times with a fork to prevent them from bursting while baking.

    Bake the Potatoes

    Rub each potato with olive oil and sprinkle with salt and black pepper. Place them directly on the oven rack and bake for about 45-60 minutes or until they are tender when pierced with a fork.

Assembling the Potato Skins

    Cool and Cut Potatoes

    Once the potatoes are done baking, remove them from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise, and scoop out a portion of the flesh, leaving a thin layer of potato on the skin.

    Fill the Skins

    Fill each potato skin with a generous amount of cheese sauce, followed by a sprinkle of cooked bacon bits, and top with shredded cheese.

    Bake Again

    Place the filled potato skins back on a baking sheet and return to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove the potato skins from the oven, and sprinkle with sliced green onions. Serve hot with a side of sour cream for dipping.
