Meatball Preparation

Mix the Meatball Ingredients

In a large bowl, combine the ground beef, ground pork, breadcrumbs, eggs, minced garlic, chopped onion, parsley, salt, and black pepper. Mix until well combined.

Form the Meatballs

Using your hands, form the mixture into small meatballs, about 1 inch in diameter. You should yield approximately 40 meatballs.

Brown the Meatballs

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the meatballs in batches, browning them on all sides. Remove and set aside.

Marsala Sauce Preparation

Sauté the Mushrooms

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.

Add the Marsala Wine

Pour in the Marsala wine and bring to a simmer. Scrape any brown bits from the bottom of the skillet.

Add the Beef Broth and Seasonings

Stir in the beef broth, dried thyme, and let the mixture simmer for an additional 5 minutes.

Thicken the Sauce

In a small bowl, mix the cornstarch and water until smooth. Gradually add this to the sauce, stirring continuously until the sauce thickens.

Combine Meatballs and Sauce

Add the browned meatballs back into the skillet, coating them with the sauce. Simmer for 10 minutes, allowing the flavors to meld.

Finish with Sour Cream

Remove the skillet from heat and stir in the sour cream until fully incorporated. Serve warm.
