Base Ingredients

Flavoring and Seasoning

Method

Preparation

  1. 1

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, bell pepper, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

  2. 2

    Cook Ground Meat (if using)

If you are using ground beef or turkey, add it to the pot now. Cook until browned, breaking it up into small pieces with a spoon, about 5-7 minutes.

Cooking

  1. 3

    Add Broth and Tomatoes

Pour in the vegetable or chicken broth and add the crushed canned tomatoes. Stir well to combine all ingredients.

  2. 4

    Season the Soup

Add chili powder, cumin, oregano, salt, and black pepper to the pot. Stir to mix the spices evenly throughout the soup.

  3. 5

    Simmer the Soup

Bring the mixture to a boil, then reduce heat to low. Cover the pot and let it simmer for 20-30 minutes, allowing the flavors to meld together.

  4. 6

    Add Beans

If using, add the drained and rinsed beans to the pot during the last 5 minutes of cooking to heat through.

Serving

  1. 7

    Garnish and Serve

Once the soup is finished, ladle it into bowls. Top with fresh cilantro, a dollop of sour cream, and a sprinkle of shredded cheese. Serve hot.
