Preparing the Battered Cod

    Make the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water, mixing until smooth.

    Heat the Oil

    In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Cod

    Dip each cod fillet into the batter, ensuring it is fully coated.

    Fry the Cod

    Carefully place the battered cod into the hot oil, frying in batches if necessary. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Making the Chips

    Prepare the Potatoes

    Peel the potatoes and cut them into thick strips.

    In another deep frying pan, heat the vegetable oil over medium-high heat. Once hot, add the potato strips in batches, frying for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

Making the Tartar Sauce

    In a mixing bowl, combine mayonnaise, sweet pickle relish, lemon juice, capers, and fresh dill. Mix well.
