Chicken Marinade

Method

Chicken Marinade

  1. 1

    Marinate the Chicken

In a large mixing bowl, combine the buttermilk, hot sauce, garlic powder, salt, and black pepper. Add the boneless chicken thighs and ensure they are well-coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for better flavor.

Breading

  1. 2

    Prepare the Breading

In a shallow dish, mix together the all-purpose flour, panko breadcrumbs, paprika, onion powder, dried oregano, salt, and black pepper. This mixture will create a crispy coating for the chicken.

Frying

  1. 3

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of bread into it; if it sizzles, the oil is hot enough.

  2. 4

    Coat the Chicken

Remove the marinated chicken thighs from the refrigerator. Take each piece and dredge it in the flour mixture, pressing gently to ensure the coating adheres well.

  3. 5

    Fry the Chicken

Carefully place the coated chicken thighs into the hot oil, working in batches if necessary to avoid overcrowding. Fry for about 5-7 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

  4. 6

    Drain the Chicken

Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain any excess oil.

Serve

  1. 7

    Garnish and Serve

Transfer the fried chicken bites to a serving platter. Sprinkle with chopped fresh parsley and serve with lemon wedges on the side for squeezing over the bites for added flavor.
