Fish Preparation

    Rinse the walleye fillets under cold water and pat them dry with paper towels.

    In a shallow dish, place the all-purpose flour. In another dish, beat the eggs until well mixed. In a third dish, place the breadcrumbs.

    Season the flour with salt and black pepper. Dip each walleye fillet first into the flour, then into the beaten eggs, and finally coat them with breadcrumbs, pressing gently to adhere.

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded walleye fillets.

    Fry the fillets for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and place on paper towels to drain excess oil.

Sandwich Assembly

    Toast the rye bread slices lightly if desired.

    Place one piece of fried walleye on each of three slices of rye bread.

  3. 8

    Top each walleye with a slice of pickle and a few rings of onion.

  4. 9

    Cover each sandwich with another slice of rye bread to complete the sandwich.
