Method

For the Dublin Pot Roast

    Prepare the Roast

    Season the chuck roast with salt and black pepper on all sides.

    Sear the Roast

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned roast and sear for about 4-5 minutes on each side until browned.

    Add Vegetables and Broth

    Add the chopped carrots, quartered onions, minced garlic, thyme, bay leaves, and beef broth to the pot. Bring to a simmer.

    Cook the Roast

    Cover the pot and reduce heat to low. Cook for approximately 3-4 hours until the meat is tender and easily shreds.

For the Dublin Mashers

    Boil the Potatoes

    In a large pot, add the cubed potatoes and cover them with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

For Serving

    Toast the Texas Bread

    Toast the Texas bread slices until golden brown.

    Assemble the Dish

    On each slice of Texas toast, spoon a generous amount of Dublin mashers. Top with shredded pot roast and drizzle with gravy.

    Serve the dish warm with additional gravy on the side.
