Prepare the Cheese and Buns
Slice the provolone cheese and hoagie buns in half lengthwise.
Cook the Steak and Vegetables

Heat the Oil
In a large skillet, heat the olive oil over medium heat.

Assemble the Sandwiches

Layer the Ingredients
Place the sautéed mixture of beef and vegetables onto the bottom half of each hoagie bun.

Add Cheese
Top each sandwich with a few slices of provolone cheese.
Grill the Sandwiches

Grill the Buns
Preheat a grill or grill pan over medium heat. Place the top half of the hoagie buns on the grill for a couple of minutes until they are toasted.

Melt the Cheese
Cover the assembled sandwiches with a lid or aluminum foil to help melt the cheese for about 2-3 minutes.

Remove the sandwiches from the heat, close them up, and serve immediately with your choice of sides.
