    In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken

    While the noodles are cooking, season the chicken breast with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook for about 5-6 minutes per side, or until fully cooked. Remove from the skillet and let it rest before slicing.

Cooking the Sauce

    In the same skillet, add 2 tablespoons of butter and melt over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Then add the sliced mushrooms and thyme, cooking for another 5-6 minutes until the mushrooms are tender.

    Pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 5 minutes. Stir in the heavy cream and continue to simmer for another 5 minutes until the sauce thickens. Adjust seasoning with salt and black pepper to taste.

    Add the cooked egg noodles and sliced chicken to the skillet, tossing everything together to coat the noodles and chicken in the creamy sauce.
