    Marinate the Chicken

    In a large bowl, combine the olive oil, minced garlic, paprika, salt, and black pepper. Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

Coating

    Prepare the Coating

    In a shallow dish, mix together the panko breadcrumbs, grated Parmesan cheese, dried oregano, and dried thyme.

    Coat the Chicken

    Remove the marinated chicken thighs from the fridge. One at a time, coat each piece in the breadcrumb mixture, pressing lightly to adhere. Place the coated chicken on a baking sheet lined with parchment paper.

    In a small bowl, whisk together the Greek yogurt, honey, mustard, and lemon juice until smooth. Adjust seasoning to taste.

Baking

    Bake the coated chicken thighs in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
