    Make the Dough

    In a large bowl, mix the all-purpose flour and salt. Gradually add boiling water, stirring with chopsticks or a fork until the mixture comes together. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine ground chicken, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until well combined.

    Assemble the Pot Stickers

    After resting, divide the dough into small pieces (about 1 inch in size). Roll each piece into a circle (about 3 inches in diameter). Place a tablespoon of filling in the center of each circle, fold in half, and pinch the edges to seal tightly. Make pleats along the edge for a decorative finish, if desired.

    Heat a non-stick skillet over medium heat and add a little oil. Place the pot stickers in the skillet in a single layer, making sure not to overcrowd. Allow them to steam for 5-6 minutes until the water has evaporated and the pot stickers are cooked through.
