Method
Preparing the Roast Beef

Slice the Roast Beef
Thinly slice the premium roast beef against the grain and set aside.
Making the Bourbon Sauce

Mix the Sauce Ingredients
In a saucepan over medium heat, combine the bourbon, soy sauce, brown sugar, Worcestershire sauce, garlic powder, and black pepper. Stir well to combine.

Simmer the Sauce
Bring the mixture to a gentle simmer and let it cook for about 10 minutes, stirring occasionally, until slightly thickened.
Assembling the Melt

Heat the Roast Beef
Add the sliced roast beef to the bourbon sauce and stir to coat. Cook for an additional 5 minutes until heated through.

Prepare the Buns
While the beef is heating, preheat your oven to 350°F (175°C). Cut the split top buns in half and place them on a baking sheet.

Add the Beef and Cheese
Spoon the bourbon-infused roast beef onto the bottom half of each bun. Top generously with shredded cheddar cheese.

Melt the Cheese
Place the baking sheet in the preheated oven and bake for about 5-7 minutes, or until the cheese is melted and bubbly.
