Season the Pork

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the pork shoulder, ensuring it is evenly coated.

Sear the Pork

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork shoulder and sear on all sides until browned, about 4-5 minutes per side. This step adds flavor.

Slow Cook the Pork

Transfer the seared pork shoulder to a slow cooker. Cover and cook on low for 8-10 hours, or until the meat is tender and easily shredded with a fork.

In a medium saucepan over medium heat, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, smoked paprika, garlic powder, salt, and black pepper. Stir well and bring to a simmer. Cook for about 10-15 minutes, stirring occasionally, until the sauce thickens slightly.

Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and pour the BBQ sauce over the top. Mix well to ensure the pork is fully coated in the sauce.
