Prepare the Peppers
Preheat the oven to 400°F (200°C). Cut the red bell peppers in half, remove the seeds, and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes until tender.

Marinate the Chicken
While the peppers are roasting, in a bowl, combine the remaining olive oil, minced garlic, dried oregano, salt, black pepper, and balsamic vinegar. Add the chicken breasts and marinate for at least 15 minutes.

Cook the Chicken
Heat a skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Once the chicken is cooked and the peppers are roasted, place the chicken on a serving plate, top with roasted peppers, and garnish with fresh basil.
