    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes. Pat the steak dry with paper towels and season both sides generously with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Sear the Steak

    Add the filet mignon to the hot skillet. Sear the steak for 4-5 minutes on one side without moving it. Flip the steak and sear the other side for another 4-5 minutes. For medium-rare, the internal temperature should reach about 130°F (54°C).

    Add Flavor

    During the last minute of cooking, add butter, crushed garlic cloves, and rosemary to the pan. Spoon the melted butter over the steak as it finishes cooking.

    Rest and Serve

    Remove the filet from the skillet and let it rest for 5-10 minutes before slicing. Serve with your favorite sides.
