Soak the potatoes
Place the cut potatoes into a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch, which helps achieve a crispier fry.

Dry the potatoes
After soaking, drain the water and lay the potato sticks on a clean kitchen towel. Pat them dry thoroughly to prevent excess moisture during frying.

Heat the oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Season the fries
Immediately sprinkle the hot fries with salt, paprika, garlic powder, and black pepper while they are still hot to enhance the flavor. Toss gently to coat evenly.

Serve the fries hot with your favorite dipping sauce or enjoy them plain. Repeat the frying process for any remaining potato sticks.
