    Using a sharp knife or a mandoline slicer, cut the potatoes into thin slices (about 1/8 inch thick). Try to keep the slices uniform for even cooking.

    Place the sliced potatoes in a bowl of cold water for at least 30 minutes. This removes excess starch and helps achieve crispy chips.

    In a deep frying pan or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to monitor the temperature.
