Cookie Layer

Method

  1. 1

In a large mixing bowl, beat together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.

  2. 2

Add the egg and vanilla extract to the mixture and beat until well combined.

  3. 3

In another bowl, whisk together the all-purpose flour, baking soda, and salt.

  4. 4

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  5. 5

Fold in the chocolate chips until evenly distributed.

  6. 6

Once the brownie layer is baked, remove from the oven and spoon the cookie dough over the top, spreading it evenly.

  7. 7

Return the pan to the oven and bake for an additional 25-30 minutes, or until the cookie layer is golden brown and a toothpick comes out clean from the cookie layer.

  8. 8

Allow the brookie to cool in the pan for at least 30 minutes before cutting into squares and serving.
