Cook the steak
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the sliced ribeye steak. Season with salt and black pepper. Cook for about 5-7 minutes, stirring frequently, until the steak is browned and cooked through. Remove from skillet and set aside.

Sauté the vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced onions and cook for about 3-4 minutes until they start to soften. Then, add the sliced mushrooms and bell peppers. Cook for an additional 5 minutes until the vegetables are tender and slightly caramelized.

Assemble the sandwiches
Slice the hoagie rolls lengthwise but do not cut all the way through. Place equal amounts of the steak and vegetable mixture into each hoagie roll. Top each sandwich with 2 slices of white American cheese.
