    Melt the Chocolate

    In a heatproof bowl, combine the chopped Valrhona chocolate with 100 ml of the heavy cream. Set it over a pot of simmering water to create a double boiler, stirring until smooth and completely melted. Remove from heat and set aside to cool slightly.

    Prepare the Custard Base

    In a medium saucepan, combine the whole milk, remaining heavy cream (150 ml), sugar, and salt. Heat over medium heat until steaming but not boiling. In a separate bowl, whisk the egg yolks until pale and slightly thickened. Gradually add the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.

    Combine and Cook

    Pour the egg mixture back into the saucepan and cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

    Mix in Chocolate

    Remove the saucepan from heat and stir in the melted chocolate and vanilla extract until well combined. Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight.

    Once the mixture is thoroughly chilled, churn it in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
