Duck Preparation

    Marinate the Duck

    In a large bowl, combine pineapple juice, chipotle peppers, cumin, oregano, salt, and black pepper. Add duck legs and marinate for at least 2 hours, preferably overnight.

    Preheat the oven to 350°F (175°C). Place the marinated duck legs on a baking sheet and roast in the oven for about 1.5 hours, or until the meat is tender and falls off the bone.

Aioli Preparation

    In a food processor, combine ripe avocados, tomatillos, garlic, mayonnaise, lime juice, and salt. Blend until smooth and creamy. Adjust salt to taste.

Assembly

    Assemble the Duck 'Al Pastor'

    Once the duck is cooked, shred the meat and place it on the ciabatta bread. Top with avocado-tomatillo aioli, grilled pineapple, cilantro, red onion, and melted Oaxaca cheese. Serve immediately.
