Prepare the Chicken
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and ginger, and cook for an additional minute.
Cook the Chicken
Add the chicken thighs to the pot, cooking until browned on all sides, about 7-10 minutes.
Add the Spices
Sprinkle in the curry powder, stirring to coat the chicken evenly. Cook for about 2 minutes until fragrant.
Add the Vegetables
Stir in the diced potatoes, spring peas, coconut milk, and vegetable broth. Bring to a simmer.
Simmer
Reduce heat to low, cover, and let simmer for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
Finish the Dish
Season with salt and pepper to taste. Stir in the toasted almonds and remove from heat.
Serve
Serve the chicken curry hot, garnished with fresh cilantro and alongside warm pita bread.
