Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into thin strips to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fries
Drain the soaked fries and pat them dry. Fry them in batches for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Season and Serve
While the fries are still hot, drizzle with truffle oil, sprinkle with grated Parmesan cheese, and top with chopped parsley. Serve immediately.
