In a large bowl, combine buttermilk, salt, pepper, and paprika. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.

In a small saucepan, combine maple syrup, Dijon mustard, apple cider vinegar, and salt. Heat over medium heat, stirring until well combined. Bring to a simmer and cook for 5 minutes. Remove from heat and set aside.

In a shallow dish, place the flour. Remove chicken from the marinade, allowing excess to drip off, then dredge each piece in flour, shaking off the excess.

In a large, deep skillet, heat vegetable oil over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 15 minutes per batch. Transfer to a wire rack to drain excess oil.
