Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and slice them in half.

Season and Toss
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until well coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until they are crispy and golden brown, stirring halfway through.

Prepare the Dressing
In a small bowl, whisk together the champagne vinegar, Dijon mustard, honey, and a pinch of salt and black pepper.

Combine and Serve
Once the Brussels sprouts are done roasting, remove them from the oven and let them cool for a minute. Drizzle the dressing over the sprouts, add the pepitas and grated Parmesan cheese, and toss to combine. Serve warm.
