Cooking Instructions

  1. 1

    Prepare the Sauce

In a large skillet, heat some olive oil over medium heat. Add the diced tomatoes, black olives, capers, and sliced piquillo peppers. Sauté for about 5-7 minutes until the tomatoes break down and the mixture is fragrant.

  2. 2

    Cook the Mussels

Add the cleaned PEI mussels to the skillet. Cover and cook for about 5 minutes or until the mussels open. Discard any that do not open.

  3. 3

    Cook the Halibut

In a separate pan, heat a little olive oil over medium-high heat. Season the halibut fillets with salt and pepper. Sear the halibut for about 4-5 minutes on each side or until cooked through and flaky.

  4. 4

    Combine Everything

Once the mussels are cooked, add the chopped fresh basil to the sauce. Place the halibut fillets on a serving platter and spoon the mussel and tomato sauce over the top.

  5. 5

    Serve

Serve the Alaskan Halibut Provencal with slices of rustic bread for sopping up the sauce and a dollop of almond pesto on top.
