Chocolate Mousse

Prepare the Chocolate
Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Let it cool slightly.

Whip the Cream
In another bowl, whip the heavy cream until soft peaks form.

Combine and Chill
Fold the melted chocolate into the whipped cream, then gently fold in the egg whites. Spoon the mixture into serving cups and chill for at least 2 hours.
Fruit Tart

Prebake the Crust
Preheat the oven to 180°C (350°F). Roll out the shortcrust pastry and place it in a tart pan. Bake for 15 minutes or until lightly golden. Allow to cool.

Make Pastry Cream
Prepare pastry cream according to your recipe or package instructions. Let it cool.

Assemble the Tart
Spread the cooled pastry cream into the tart crust and top with mixed fruits.

Prepare Gelatin Glaze
Dissolve gelatin in warm water and brush over the fruits for a glossy finish. Chill until set.

Combine crushed graham crackers and melted butter. Press the mixture into the bottoms of muffin tins to form crusts.

Mix the Filling
In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.

Bake and Cool
Pour the filling over the crusts and bake at 160°C (320°F) for 20 minutes. Allow to cool and refrigerate for at least 4 hours.
