Preparation
Prepare the Boudin
Remove the boudin sausage from its casing and place it in a large mixing bowl.
Mix Ingredients
Add chopped green onions, Cajun seasoning, salt, and black pepper to the bowl. Mix well until all ingredients are combined.
Form the Balls
Using your hands, form the mixture into balls about the size of golf balls.
Prepare Breading Station
Set up a breading station with three bowls: one with flour, one with beaten eggs, and another with panko breadcrumbs.
Bread the Boudin Balls
Roll each boudin ball in flour, dip in the beaten eggs, and then coat with panko breadcrumbs. Ensure they are evenly coated.
Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Boudin Balls
Fry the boudin balls in batches for about 4-5 minutes or until they are golden brown and crispy. Remove and drain on paper towels.
