    Prepare the Potatoes

    Boil the new potatoes in salted water until fork-tender, about 15-20 minutes. Drain and set aside.

    Roast Garlic

    While the potatoes are boiling, preheat the oven to 400°F (200°C). Wrap garlic cloves in aluminum foil with a drizzle of olive oil, seal, and roast in the oven for 20-25 minutes.

    Cream the Potatoes

    Once the garlic is done roasting, mash it with the potatoes and mix in heavy cream until smooth. Season with salt and pepper to taste.

    Prepare the Filet

    Preheat a skillet over medium-high heat. Wrap each filet with two slices of bacon, securing with toothpicks if necessary.

    Cook the Filet

    Add olive oil to the skillet and sear the bacon-wrapped filets for about 3-4 minutes on each side for medium-rare. Transfer to a plate and let them rest.

    Make the Sauce

    In the same skillet, add red wine and beef broth. Scrape the bottom of the skillet to deglaze, and let it simmer for about 10 minutes until reduced by half. Stir in butter for added richness.

    Fry the Onion Rings

    In a separate pan, heat oil and fry the onion rings until golden brown. Drain on paper towels.

    Plate the creamed potatoes, top with the bacon-wrapped filet, drizzle with marchand de vin sauce, and garnish with fried onion rings.
