Method
Pudding
- 1
Prepare Dates
Chop the pitted dates and place them in a bowl. Pour boiling water over the dates and let them soak for about 15 minutes until soft.
- 2
Preheat the Oven
Preheat your oven to 180°C (350°F). Grease a baking dish (about 8x8 inches) with butter.
- 3
Mix Butter and Sugar
In a large bowl, cream together the unsalted butter and brown sugar until light and fluffy.
- 4
Add Eggs and Vanilla
Beat in the eggs one at a time, followed by the vanilla extract.
- 5
Combine Dry Ingredients
In another bowl, whisk together the flour, baking powder, and salt.
- 6
Add Dry Ingredients and Dates
Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the soaked dates along with the water.
- 7
Bake the Pudding
Pour the batter into the prepared baking dish and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Toffee Sauce
- 8
Melt Butter and Sugar
In a saucepan over medium heat, melt the unsalted butter and brown sugar together, stirring until the sugar has dissolved.
- 9
Add Heavy Cream
Once the butter and sugar mixture is smooth, gradually stir in the heavy cream. Allow the sauce to simmer for 5-10 minutes until it thickens slightly.
