Preparing the Pasta

Cook the Pasta
In a large pot, bring water to a boil. Add 1 tablespoon of salt and the pasta. Cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside.

Chop the Vegetables
While the pasta is cooking, wash and chop the bell pepper, zucchini, carrot, and broccoli into bite-sized pieces. Halve the cherry tomatoes.

Sauté the Vegetables
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then add the chopped vegetables (bell pepper, zucchini, carrot, and broccoli) and sauté for 5-7 minutes until they start to soften. Add the cherry tomatoes and spinach, cooking for another 2-3 minutes until the spinach wilts.
Combining and Serving

Combine Pasta and Vegetables
Once the vegetables are cooked, add the drained pasta to the skillet. Pour in the lemon juice, and sprinkle the parmesan cheese and black pepper. Toss everything together over medium heat until well combined and heated through.

Serve immediately, garnished with additional parmesan cheese and a drizzle of olive oil if desired.
