Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and prepare four ramekins by greasing them with butter and dusting with flour, or using non-stick cooking spray.

  2. 2

    Melt Chocolate and Butter

In a medium heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together using a double boiler method or microwave in short bursts, stirring until smooth.

  3. 3

    Mix Sugar and Eggs

In another bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture becomes thick and pale in color, about 2-3 minutes.

  4. 4

    Combine Mixtures

Pour the melted chocolate and butter mixture into the egg mixture, stirring gently until combined.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture and fold gently until just combined. Be careful not to overmix.

  6. 6

    Add Vanilla Extract

Stir in the vanilla extract until fully incorporated.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

Baking

  1. 8

    Bake the Lava Cakes

Place the filled ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.

  2. 9

    Cool Slightly

Remove from the oven and let the cakes cool for about 1 minute. Carefully run a knife around the edges to loosen.

  3. 10

    Invert and Serve

Invert each ramekin onto a plate and gently lift off. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
