    Prepare the Corned Beef

    In a large pot, submerge the corned beef in water and bring to a boil. Reduce heat and simmer for 2.5 to 3 hours until tender. Let cool, then slice against the grain.

    Cook the Sauerkraut

    In a medium saucepan, combine sauerkraut and Lake Louie scotch ale. Simmer over medium heat for about 10 minutes until heated through and flavors meld.

    Assemble the Reuben

    On a slice of black rye bread, layer sliced corned beef, a generous spoonful of the sauerkraut mixture, and two slices of Swiss cheese.

    Grill the Sandwich

    Top with another slice of black rye bread and spread butter on the outside. Heat a skillet over medium heat and grill the sandwich for about 4-5 minutes on each side until golden brown and the cheese is melted.

    Serve

    Remove from heat, slice in half, and serve with Thousand Island dressing on the side.
