Cooking Instructions

1

Prepare the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

2

Make the Cheese Sauce

In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until golden. Gradually whisk in the milk, cooking until the mixture thickens. Stir in the smoked cheddar cheese until melted and smooth. Season with salt and black pepper.

3

Combine Pasta and Cheese Sauce

In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Fold in the crispy pork belly and mix well.

4

Assemble the Dish

Transfer the mac and cheese to a greased baking dish. Top with herb bread crumbs and crumbled buttermilk blue cheese.

5

Bake

Preheat the oven to 350°F (175°C). Bake the mac and cheese for 20-25 minutes until bubbly and the top is golden brown.

6

Garnish

Remove from the oven and let cool for a few minutes. Garnish with chopped scallions before serving.
