Method
Cooking the Pork Tenderloin
Prepare the Rub
In a small bowl, mix together chili powder, garlic powder, cumin, salt, and black pepper. Rub this mixture all over the pork tenderloin.
Roast the Pork
Transfer the seared pork to a preheated oven at 400°F (200°C) and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
Preparing Papas a la Mexicana
Add Vegetables
Stir in diced tomatoes, onions, and jalapeños. Cook for an additional 5-7 minutes, seasoning with salt.
Roasting Sweet Corn
Making Mango Habanero Glaze
Combine Ingredients
In a small saucepan over medium heat, combine mango puree, minced habanero, honey, and lime juice. Stir until heated through, about 5 minutes.
Assembly
Plate and Garnish
Slice the pork tenderloin and serve over papas a la Mexicana. Top with roasted sweet corn, drizzle the mango habanero glaze, and garnish with queso fresco and cilantro.
