Marinate Chicken

In a bowl, combine coconut milk, fish sauce, lime juice, minced garlic, and grated ginger. Whisk until well mixed.

Marinate the Chicken

Add chicken breasts to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.

Prepare Cucumber Salad

Mix Ingredients

In a bowl, combine sliced cucumbers, rice vinegar, sugar, and chopped cilantro. Toss to coat and set aside to marinate.

Make Slaw

Combine Slaw Ingredients

In a large bowl, mix shredded Napa cabbage, shredded carrot, sesame oil, sesame seeds, and salt. Toss to combine and set aside.

Prepare Aioli

Mix Aioli

In a small bowl, combine mayonnaise, sriracha, and honey. Stir until smooth and set aside.

Fry Chicken

Heat Oil

In a large skillet, heat oil over medium-high heat.

Fry Chicken

Remove chicken from marinade, allowing excess to drip off. Fry in hot oil for about 5-7 minutes per side or until golden brown and cooked through.

Assemble the Sandwiches

Build the Sandwich

On a brioche bun, place a piece of fried chicken, top with cucumber salad, Napa cabbage slaw, and a drizzle of sriracha honey aioli. Close with the top bun and serve.
