Prepare the Apples
In a medium bowl, toss the diced apples with 1/2 cup of granulated sugar and 1 tsp of cinnamon. Set aside to let them marinate.

Prepare the Biscuit Dough
Preheat your oven to 350°F (175°C). Open the biscuit dough package and cut each biscuit into quarters.

Coat the Biscuit Pieces
In a large bowl, mix the quartered biscuit pieces with the remaining 1/2 cup of sugar and 1 tsp of cinnamon until well coated.

Layer the Ingredients
In a greased bundt pan, layer half of the coated biscuit pieces, followed by half of the marinated apples. Repeat the layers with the remaining biscuit pieces and apples.

Brown the Butter
In a saucepan over medium heat, melt the unsalted butter. Continue cooking until the butter turns golden brown and has a nutty aroma. Remove from heat and stir in the vanilla extract.

Bake
Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted comes out clean.

Cool and Serve
Allow the monkey bread to cool for 10 minutes before inverting it onto a serving platter. Serve warm with scoops of gelato on top.
