Prepare the Custard
In a mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, and a pinch of salt until well combined.

Soak the Brioche
Arrange the brioche slices in a baking dish and pour the custard mixture over the bread. Make sure all slices are evenly soaked. Cover and refrigerate for at least 2 hours or overnight.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Bake the French Toast
Remove the brioche from the fridge and let it sit at room temperature for 10 minutes. Bake in the preheated oven for 30-35 minutes until set and lightly golden.

Caramelize the Sugar
Sprinkle raw sugar evenly over the top of the baked French toast and use a kitchen torch to caramelize the sugar until it forms a crispy layer.

Make the Berry Compote
In a small saucepan, combine mixed berries, granulated sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 5-7 minutes.

Slice the baked French toast and serve warm with the berry compote drizzled on top.
