Method
Cucumber Simple Syrup
Make syrup
Combine 1 cup sugar and 1 cup water in a small saucepan over medium heat. Stir until sugar dissolves and liquid comes to a gentle simmer.
Remove from heat and let steep, uncovered, for 20–30 minutes for a brighter cucumber aroma.
Strain syrup through a fine mesh sieve or cheesecloth into a clean container, pressing on solids to extract liquid. Cool completely. Refrigerate up to 2 weeks.
Ginger Syrup
Make syrup
Combine 1 cup sugar, 1 cup water and the sliced fresh ginger in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar dissolves.
Simmer for 8 minutes to infuse ginger, then remove from heat and let steep for 20 minutes to deepen flavor.
Strain out ginger pieces and cool. Refrigerate up to 2 weeks.
Assemble Virgin Gordon
Muddle: in a shaker or mixing glass, add 3 seedless cucumber slices and 6 mint leaves. Gently muddle just to bruise the mint and release cucumber juice (do not pulverize).
Add juices and syrups: pour in 1 oz fresh lime juice, 0.5 oz fresh lemon juice, 0.75 oz cucumber simple syrup and 0.5 oz ginger syrup to the muddled mixture.
Dry shake: if using an uncovered shaker, shake briefly without ice 6–8 seconds to integrate and aerate.
Add ice to the shaker (or pour the contents over the ice-filled serving glass) and shake or stir 6–8 seconds to chill.
Strain into the prepared ice-filled glass over fresh ice (fine or double strain if you prefer no solids).
Top with 4 oz chilled tonic water (or club soda if you prefer less bitterness). Stir gently once to combine.
Serving & Storage
Serve immediately while fizzy and cold. If preparing syrups ahead, keep refrigerated. Assembled mocktail is best enjoyed immediately and not stored with tonic to preserve carbonation.
