Prepare Glass and Muddle

Place the fresh mint leaves (about 8–10 leaves) into a sturdy highball or Collins glass. Add the lime wedge and, if using, the teaspoon of raw sugar. Using a muddler, gently press and twist the mint and lime together 6–8 times — the goal is to release the mint oils and lime juice without shredding the mint into tiny pieces. If using simple syrup instead of raw sugar, add the syrup after muddling the mint and lime.

Add Spirits and Ice

Pour 2 oz white rum into the glass. Fill the glass roughly three-quarters full with crushed ice (about 1 cup).

Mix

Using a long bar spoon, stir the mixture briskly for 10–15 seconds, lifting the mint from the bottom so the mint oil distributes through the drink and the lime and syrup combine with the rum.

Top and Garnish

Top the drink with about 2 oz club soda (adjust to taste) to give effervescence. Give one gentle stir to integrate the soda without flattening it. Add a fresh mint sprig and, if desired, an additional lime wedge on the rim for garnish. Optionally slap the mint sprig gently between your palms before garnishing to activate the aroma.

Serve

Serve immediately with a straw (optional) so the drinker can draw through the aromatic mint. Taste and adjust sweetness or soda if needed.
